When your iPhone is synced with an Exchange mailbox, the “auto-lock: never” setting magically dissapeared. Needles to say I don’t like that very much. Here’s how you disable it.

SSH to your iPhone, and rename the following file in something else:

/private/var/Managed Preferences/mobile/com.apple.springboard.plist

Now reboot your Jezus-phone et voila, now you can go into settings > general > Auto-lock and set it to “never” again :)
